Next time I go to New York this drink has to make it to my mouth- Coco Chanel cocktail, which was just added to the menu at Betony in New York City. It features Lillet, Bergamot, and Champagne, and includes a Chanel No. 5-infused spearmint garnish.  Happy Friday…

To make the crushed ice, Betony’s general manager Eamon Rockey recommends you fold ice cubes into a clean kitchen towel that’s been rinsed with water and wrung out. Then, place the towel on a hard surface like a heavy cutting board and smash it firmly with a small sauté pan.
2 oz. Lillet Blanc
3/4 oz. lemon juice
1/2 oz. simple syrup
1 lemon peel
2 dashes rosewater
Shake all above ingredients with one cube of ice and pour into chilled rocks glass. Fill glass with pink Champagne and add more crushed ice to form a mound on the top of the cocktail. Garnish with a bunch of mint that has been lightly scented with Chanel No. 5 (Betony uses a small roll-on applicator to scent it). Sip through a straw.
